Before we start, I should tell you that I wanted to title this: For self-proclaimed “Kitchen Disasters” like myself….but I didn’t want to offend anyone. Listen, I’m not a food blogger and I don’t really know how to cook. BUT, I know how to be efficient and feed my family. So….if that interests you, please continue. Please don’t come at me with critiques because I already know that these recipes are literally scraping the bottom of the barrel, okurrr? 😉
If you have ever had a day where you literally FORGOT to plan dinner (like it doesn’t happen every night…but yet, I forget at least once a week! 🤦♀️🤦♀️🤦♀️), then these recipes may help you!!!
First, don’t beat yourself. Instead, ask yourself: are you breathing? How about your kids and/or pets? Still have a roof over your head? Great – then you are doing just fine. No one is expecting a 4 course meal for dinner, so plan one of these totally acceptable dinners and move along with the evening.
Recipes:
Chicken + salsa + slow cooker (or Instant Pot) = salsa chicken (add tortillas, avocado, lettuce, cheese, sour cream, rice, etc.) (you can also make quesadillas with the leftovers)
Chicken + taco seasoning packet + slow cooker (or Instant Pot) = tacos (add taco shells, tortillas, cheese, lettuce, sour cream, etc.) (you can also make quesadillas with the leftovers)
Chicken + Olive Garden dressing + slow cooker (or Instant Pot) = Italian Chicken (put it on salads or make a bag of frozen steamed veggies)
Chicken + BBQ Sauce + slow cooker (or Instant Pot) = BBQ Chicken (put it on a sandwich, make a bag of frozen veggies, shred it and make a sandwich, get some coleslaw…or make a BBQ Chicken Grilled Cheese!)
Chicken + Caesar Dressing + slow cooker (or Instant Pot) = Caesar Chicken (shred it for Caesar wraps or add it to salads)
Chicken + Teriyaki Sauce + frozen veggies + slow cooker (or Instant Pot) = Chicken Stir Fry (get a bag of microwavable rice and you are set!)
Obviously, these meals do take a little planning unless you have an Instant Pot, which will cook up your creation quickly…but if you have these things at your house already, then plopping them in before you leave for work isn’t too much of a stretch.
Also, I don’t have measurements because I don’t use measurements – put in some chicken and some sauce! If you need exact measurements, then you can look up some recipes with these ingredients to see what people who actually know what they are doing suggest. I only provided this post because so many women on social media ask about quick and easy recipes that I wanted to have it all in one place for you!
